Chicken and Ricotta Parcels

100 g ricotta cheese, reduced fat1 teaspoon dried rosemary (or sage)1 shallot, chopped finely4 medium skinless, boneless chicken breasts2 tablespoons honey1 teaspoon chili powder (or cayenne pepper)salt and freshly ground black pepper
Serves 4
1. In a bowl mix the ricotta cheese with the rosemary, shallot and freshly ground pepper.
2. Cut a deep slit in the side of the chicken breasts and open out to form a pocket. Stuff each breast with a spoonful of the cheese mixture. Secure the pocket with a cocktail stick. Place the chicken breasts on a grill pan.
3. In a small pan mix the honey and chili powder (or cayenne pepper). Melt the honey a little if not already runny. Brush the chicken with the honey mixture and place under a hot grill for 7-8 minutes or until cooked through.
4. Remove the cocktail stick before serving the chicken.
