Roasted Veggies

Ingredients
1 cup cubed Yams4 Parsnips cut in large pieces1 medium onion quartered4 medium carrots cut in large pieces1 large potato 3" - 41/2 " cubed4 medium celery stalks cut in 1" chunks1 tbsp extra light Olive oil1 tbsp. Garlic Powder
Directions
Makes 6 1-cup servings
Peel and cut up all veggies. Put about a 1/2 teaspoon of the oil in the bottom of a roasting pan and add veggies. Sprinkle remaining oil over them and then sprinkle Garlic powder over them. Place Lid on top of Roasting pan and Shake to Distribute oil and seasoning. Place in a preheated oven (350 degrees Farenheit and roast for 50 min. REmove lid the last 10 minutes to brown. Greek Seasoning mix may also be used in place of the Garlic Powder. Veggies may also be placed in Foil pouches and roasted on the barbeque.
