Ingredients
2 1/2 Cups whole wheat flour1 tsp. baking powder1 tsp. baking soda2 tsp. ground cinnamon1/2 tsp. each of nutmeg, cloves and salt1/2 cup margarine1 1/2 cup splenda1 cup cooked pumpkin1 egg1 tsp. vanilla
Directions
Preheat oven to 350 F. Cream margarine, sugar, pumpkin, eggs and vanilla and beat until creamy. Add in dry ingredients and mix well. Drop by teaspoonful onto cookie sheet, slightly flatten. Bake for 15-20 minutes.

    These cookies were not great. They actually turned out more like flavorless dough lumps and tasted like uncooked flour. With regular Splenda (per the recipe) the cookies had nothing to caramelized. Will not make again. - 12/5/11
