Quinoa

Ingredients
2 cups quinoa2 medium carrots2 cups mushrooms3 tsp mushroom boullion1 medium onion2 cans diced tomatoes2 cups water1 tbsp oilherbs de provence.
Directions
Heat oil over medium heat and saute onions and carrots for several minutes. Add mushrooms and saute a few minutes more. Add tomatoes, water, boullion, herbs and quinoa. Bring to a boil, cover pot and reduce heat to simmer. Simmer for 15 to 20 minutes.
