Single-Serving California-Style Chicken Cordon Bleu

Ingredients
4 ounces boneless chicken breastpinch salt and pepper1 teaspoon vegetable oil1 ounce extra lean ham1 slice avocado1 slice fresh tomato1 ounce Monterey Jack Cheese
Directions
Preheat oven to 450 degrees F. Wash and pat dry the chicken, remove any visible fat. Place chicken in a zip lock bag. Pound out the chicken to a 1/2 to 3/4 inch thickness. Season with salt and pepper. Heat saute pan then add oil. Saute chicken until browned on both sides. Remove chicken from the saute pan and place into an oven safe baking dish. Sear ham in the hot pan just until browned. Place ham on top of the chicken. Continue to layer with the tomato, avocado and then cheese. Bake until chicken reaches 165 degrees F and cheese is bubbly. Serve warm.

TIP: Try adding the avocado after the chicken is baked and serve it as a garnish.

    We tried this for dinner this evening. Instead of Avocado, we added Asparagus. My husband is not a fan of asparagus, and I had never tried it until this meal. OUTCOME: WE LOVED IT! This was a very EASY and TASTEY meal! Will definitely make it again!! - 3/24/10

    Made this even skinnier by pounding the chicken super thin and wrapping all the ingredients inside, then omitting the oil and baking the whole thing so that they were chicken filled pockets of GOOD! Very yummy and easy transporting for complete lunches! - 4/18/11

    Made this tonight. Everyone loved it. Ended up baking the chicken about 20 minutes. Think next time I will wait till 10 mins left on time to add the cheese and tomato. Added avocado afterwards. But all and all delicious! - 1/6/10

    This was very good. Even my kids loved it. I lightly breaded the chicken. I also cooked it with the ham for 15 minutes then added the tomato, avacado and cheese. Then I broiled until it was browned and bubbly on the top. Delish! - 2/28/10

    This was very good. I usually make Cordon Bleu w/ ham, mushrooms & Swiss, but this was a nice change. I also rolled it all up inside the chicken and baked the whole thing for 40 mins at 350d. Just a note, the nutritional breakdown doesn't include the calories for the avocado or the ham. - 5/22/13
