Glazed Lemon Loaf

Ingredients

6 Tbsp Becel light (a butter substitute)1 cup granulated Sugar (divided)4 egg whites1 and 1/2 cups white flour1/2 tsp baking poweder1/2 tsp salt1/2 cup 1% or skim milkgrated rind of 1 lemonjuice of 1 lemon (divided)**Note, increase amount of lemon juice for a greater lemon intensity
Cream together Becel and 3/4 cup sugar.
Add egg whites, beating well.
Stir in lemon rind and juice of 1/2 of the lemon.
Mix flour, salt, and baking powder together in another bowl.
Blend wet ingredients with dry ingredients, adding milk and mixing until just blended with a fork (do not beat).
Bake in a loaf pan sprayed with low fat cooking spray (such as Pam) in 325 degree oven for approx 40 mins.
Remove from oven, mix juice of 1/2 of lemon with 1/4 cup sugar, and spread over top of loaf immediately.
Let cool before removing from pan.

To be honest I find that using chemicals instead of natural food products in many of these recipes a bit self defeating.If as mentioned here artificial sweeteners increase appetite then why use them? There are ways to use natural foods in cooking which consumed in moderation do not cause weight gain - 7/11/10

I wish this had lasted long enough for a pic. It was wonderful and relatively easy to make. I used margarine as I had no idea what Becal was, also used 2 whole eggs instead of just whites. Skipped the zest, didn't have any. But even with those modifications, it was soooo yummy!!! - 10/6/11
