Ingredients
Saute assorted vegetables such as1c asparagus, 1c mushrooms, 1c peppersalong with 3 slices of canadian bacon.Whisk together in a bowl: 12 egg whites and 1/2c cottage cheese with some feta.Pour over veggies and cook 5 min on stove.Add low fat swiss slices to top.Transfer into oven(oven safe pan)@400 until set.
Directions
saute vegetables, whisk eggs and cottage cheese, pour over veggies in oven safe pan, top with swiss and bake at 400 for 20 min.
