Warm Potato Salad

Ingredients
4 ea Large Baking Potatoes, scrubbed and diced with the skin on1/4 cup Olive Oil2 cups Cheddar Cheese, shredded1 cup Mayonnaise.5 cup Bacon Bits
Directions
1. Preheat oven to 425F.
2. Place diced potatoes on a sheet pan. Toss with Olive Oil. Bake for about 20-30 minutes, turn over about halfway through. Should be golden and cooked through.
3. Toss with remaining ingredients and season with salt & pepper.
