Lentil and Rice Casserole

Ingredients

1 cup brown rice 1/2 cup dry lentils (I like using the red)1 cup carrot slices1 cup chopped onion1 cup diced celery1 1/2 cups sliced fresh mushrooms1/2 can tomato paste1 can tomato soup1 cup Swiss cheese, shredded (optional)1 Tbs. chili powder1 tsp. salt1/2 tsp. pepper
Cook brown rice in 2 cups water until tender and fluffy. Cook lentils in 1 cup water until tender.
Saute carrots, onion , celery and mushrooms in tomato paste and a small amount of water or vegetable broth until crisp-tender.
In a medium-large bowl, combine the cooked rice and lentils, sauted veggies, tomato soup,
chili powder, salt/pepper, and 3/4 cup of the cheese.
Bake at 350 degrees for 20 minutes. Add the remaining cheese and bake another 5 minutes until cheese melts.

I made this for my family last night (15 year old brother and parents). Honestly they all seemed to like it A LOT more than I did. But I think every cook is a tad more critical of their own work!! Also wanted to point out your cals are off. The brown rice value is for cooked measurements. - 3/7/08

This is a really great recipe! I altered it to fit my taste, and it took beautifully to it! I don' t like swiss, so I used reduced fat italian blend cheese. I will admit to adding a little more, and, like others, reduced the chili powder. My friends and I really loved this comforting dish! - 10/30/11

I thought this would be kinda boring since it is such a simple recipe, but I liked the nutritional info and had all the ingredients on hand one night. Boy, was I wrong, it was FANTASTIC and filling! Even my meatatarian boyfriend loved it! I will DEFINATELY be making this again and again! - 8/25/10
