Lentil and Rice Casserole

Ingredients
1 cup brown rice 1/2 cup dry lentils (I like using the red)1 cup carrot slices1 cup chopped onion1 cup diced celery1 1/2 cups sliced fresh mushrooms1/2 can tomato paste1 can tomato soup1 cup Swiss cheese, shredded (optional)1 Tbs. chili powder1 tsp. salt1/2 tsp. pepper
Directions
Cook brown rice in 2 cups water until tender and fluffy. Cook lentils in 1 cup water until tender.
Saute carrots, onion , celery and mushrooms in tomato paste and a small amount of water or vegetable broth until crisp-tender.
In a medium-large bowl, combine the cooked rice and lentils, sauted veggies, tomato soup,
chili powder, salt/pepper, and 3/4 cup of the cheese.
Bake at 350 degrees for 20 minutes. Add the remaining cheese and bake another 5 minutes until cheese melts.

    I had never tried lentils before but saw a dish prepared on The Biggest Loser using them. I found this recipe and gave it a try. It is fantastic! I didn't even bake it in the oven, just used a big deep skillet on the stovetop. I used diced tomatoes instead of tomato paste, too. - 2/9/08

    Great, I will make this again. I found a blend of carrots, celery and onions in the frozen food section which really made this easy. This was also the first time I cooked lentils. I added garlic just because and this was a very tasty dish. - 10/6/09

    Instead of tomato soup, I used a can of tomatoes. I also cut the chili powder to 1 tsp. instead of 1 tbs. (I don't like really hot food.) My husband really liked it. I liked it too, but not as much as he did. - 1/24/08

    So, I didn't have regular tomato soup, but had a carton of Parmesan flavored tomato bisque. I used that and mozz cheese instead of swiss. Then I halved the chili powder and added some Italian seasoning. It was soooooo good. My husband agrees. - 11/4/10

    Really enjoyed this recipe. Had to alter it quite a bit to use what I had on hand so I created a makeover recipe. I cut mine into 10 pieces so the calories were only 82 a serving. Used canned tomato in place of tomato paste & soup. Used frozen onion/pepper blend and no mushrooms. - 4/6/16

    This was great! I didn't have any chili powder on hand so I just threw in some dried garlic flakes with my veggies while they were sauteing. It was great! Also, I used low fat mozzarella cheese cause I couldn't find swiss at our local grocer. Will definitely make again! - 3/4/13

    This is a really great recipe! I altered it to fit my taste, and it took beautifully to it! I don' t like swiss, so I used reduced fat italian blend cheese.
