Breaded Chicken Strips w/Squash & Zucchini

8 frozen chicken tenderloin strips4 egg whites1 c. bread crumbs (any style)2 c. sliced zucchini2 c. sliced squash8 tsp. grated parmesan3 tsp. garlic powder1 Tbsp. black pepper
1. Preheat oven to 375.
2. As oven heats, slice vegetables and start a pot of water to boil.
3. Put all 4 egg whites in a medium bowl, and the bread crumbs in a separate medium bowl.
4. Coat chicken in egg whites, letting excess drip off.
5. Immediately coat in bread crumbs and transfer to a baking sheet.
6. Once all chicken is prepared, put into oven for 20-23 minutes.
7. After chicken is in the oven & water is boiling, put zucchini, squash, garlic powder, and pepper in the pot & stire occasionally.
8. The vegetables and chicken should be done about the same time.
9. Serve 2 chicken strips & 1 cup of veggies on each plate. Sprinkle vegetables with 2 tsp. parmesan.
