Gluten Free Pizza Crust

Ingredients
1 t. sugar1 c. warm water1 t. yeast1 1/4 c. rice flour3/4 c. potato starch1/2 c. tapioca flour1 t. xanthan gum1 t. salt1 T. olive oil1 egg
Directions
1. Add all flours in one bowl.
2. Add water, yeast, sugar, salt.
3. Mix olive oil and egg.
4. Form a well and put wet ingredients in the center. Stir to
combine.
5. Knead dough until smooth - add more potato starch if
needed.
6. Allow to rise 20 -30 minutes.
7. Roll to 1/4 inch thickness - first by hand, then rolling pin.
8. Top with pizza ingredients of your choice.
9. Bake at 400 degrees until golden brown.

Makes 4 medium pizzas.
