Wholemeal Pancakes

Ingredients
100g Wholemeal flour250ml Alpro soya light2 egg whitesfry light
Directions
Place flour into bowl and beat in the 2 egg whites and half the soya milk untill smooth and lump free.
Add the remaining soya milk until a consistancy of single cream is reached.
Spray a heated frying pan with fry light and add a ladle full of bater, rotating the pan until the bottem is coated with mixture.
After about 1 minute using a palette knife turn the pancake over, fry for 3 minutes.
Turn over again (or flip!) and fry for a further 3 minutes or until golden brown on both sides.
Serve immediately with the filling/topping of your choice.
Makes 5 pancakes

    I substiuted the soya milk for semi skimmed milk, but used everything else the same, and they came out lovely! Topped them with frozen berries and a tiny splash of honey, and they were gorgeous! Guilt free treat, i like them :) - 3/17/10
