Asian Tofu Salad

2 tsp. Thai sweet chili sauce 1/2 teaspoon fresh ginger, graded1 clove garlic, pressed2 tsp. low sodium soy sauce2 Tbs. sesame oil1 cup firm tofu, drained and cut into small cubes1/2 cup pea pods, cut in half1/2 cup red cabbage, shredded2 small carrots, shredded thickly2 teaspoons peanuts, chopped
1. Make a marinade of the oil, garlic, ginger, soy sauce, and chili sauce in a resealable container. Add the tofu cubes and marinade for 1 hour in the refrigerator.
2. Steam the pea pods for one minute then soak in an ice bath.
3. Once the pea pods are cool, drain and toss with the carrots, cabbage, marinade and tofu.
4. Sprinkle servings with chopped peanuts,
