Spinach Triangles w/ Phyllo Dough

Ingredients
15 oz. fat-free ricotta cheese1 pkg. frozen spinach1 eggparmesan cheese to taste, optional1 heaping tsp. chopped garlic1 tsp. onion powder1/2 tsp. black pepper1/2 tsp. oregano1/2 tsp. paprika1/2 tsp. salt8 oz. (20 sheets) phyllo doughcooking spray
Directions
Combine all ingredients except last two; mix well. Pre-heat oven to 375. Handle phyllo dough carefully and place one sheet on a cutting board. Spray with cooking spray. Place a second sheet of dough, and spray again. Use pizza cutter to cut these two sheets into three long strips, approx. 3"x14". Place spoonful of cheese mixture at one end of one strip. Fold corner over to flat side, then continue to fold like a flag until you use up all of that strip. Place on a sprayed cookie sheet and spray top of triangle with more cooking spray. Continue process until you have made 30 appetizers. Bake for 15 minutes or until golden. Serve warm.

    I love these. The first time I made them, I couldn't get my Phyllo to lay right, so I made them "lasagna style" in a pan, and cut them. Made them for my New Year's party and told NOBODY that they were healthy until everyone raved! Yummo! - 4/28/12
