Cabbage Stew

Ingredients
1/2 head of cabbage2 med. sized onions3 medium sized potatoes3 medium sized carrotsvegetable stock
Directions
Good with an omelet or souffle. Great for when your really busy. Just cut and simmer.

1/2 head of cabbage, cut into bite size pieces.
2 1/2 or 6 1/4 cups of water
1 1/2 tsp. salt
3 tblsp light olive oil
2 medium sized onions, cubed
1/2 tsp. black pepper
1 tblsp light butter
3 medium sized potatoes, scrubbed and cut into 1/4 inch cubes.
3 carrots peeled and sliced
4 fl. oz or 1/2 cup Dark Vegetable Stock

Put the cabbage into a large saucepan. Pour in the water and add 1 tsp of the salt. Place the saucepan over moderately low heat. Add all ingredients and simmer until vegetables are tender.
