Spelt Bread

Ingredients
* Spelt Flour - White, 3.5 cups* 1tsp sugar * Water, bottled, 7 ounces Warmed * Salt, 1/2 tsp * Yeast, bakers, 1 tsp
Directions
Mix warm water, sugar and yeast and set aside. Mix flour and salt. Once yeast is bubbling, add to flour mixture and mix well. Continue to mix by hand until dough is soft and pliable. If needed add 1 tsp of water at a time until it is pliable. If dough is sticky, add more flour 1 tbsp at a time. Lightly coat a bowl with oil, add dough after forming it into a nice ball, cover with a tea towel and set in a warm spot for 1 hour or until dough has doubled in size. Lightly oil a loaf pan. After dough has doubled, pull it out and punch down. Place it into the loaf pan and allow to rise in a warm spot for 1 hour covered with a tea towel (or something that will breath - do not use plastic wrap). Remove tea towel after one hour and turn on oven to 350 and bake immediately for 40 minutes.
