black bean and mango chicken salad

Ingredients
1 can (16) ounces black beans, drained, rinsed1 package (10 ounces) frozen corn, thawed1 cup chopped ripe mango1/2 pound boneless skinless chicken breasts, grilled, cut up1/2 cup chopped red pepper1/3 cup chopped fresh cilantro1/3 cup lime juice1 envelope *good seasons italian dressing mix
Directions
toss all ingredients in large bowl. Refrigerate.
Serve with tortilla chips!

    This combination of flavors was an entirely new adventure for me and my husband. He normally doesn't even like mango, but we both thought this was fantastically good and I'll make it again for sure. It might be a new fave! I used bottled Italian rather than the envelope. - 10/15/11
