Awesome Lentil & Rice Salad

Ingredients
1 Tbsp Lemon Zest1/4 cup Lemon Juice2 Tbsp Olive Oil1 tsp Dijon Mustard1/4 tsp CinnamonPinch Cayenne1 - 19oz (540ml) can Lentils, drained & rinsed2 cups Long or Short Grain Brown Rice, cooked1 cup Parsley, coarsely chopped3/4 cup Red Onion, diced1/2 cup Currants1/2 cup Dried Cranberries1 Tbsp Mint, finely choppedWhisk together lemon zest & juice, olive oil, dijon, cinnamon & cayenne.Add drained & rinsed Lentils; tossAdd Rice and toss until just combined.Add parsley, red onion, currants, cranberries & mint. Toss until just combined.
