Low Cal Baked Oatmeal

1/2 C unsweetened applesauce1 C egg whites (Egg Beaters)1 Tbsp cinnamon1 tsp salt1 tsp baking powder1 tsp vanilla3 C dry old fashioned oatmeal1 C nonfat milk*Cool Whip, 2 Tbsp per serving *use Lactose Free for extra sweetness
Preheat oven to 350 F.
Spray 9x9 cooking pan with non-stick spray. Whisk applesauce and eggs.
Add cinnamon, baking powder, salt and vanilla. Whisk again.
Add Oatmeal, then milk.
Mix well.
Spread batter into 9X9 pan.
Bake at 350 degrees for 30-35 minutes.
Let cool slightly.
Slice into 12 bars.
Can be warmed in microwave and topped with Cool Whip for a desert. Freezes and packs well too.

I love this receipe. I add a half cup of dried chopped apricots or raisens. I usually double the receipe and send it with my husband for his breakfast on the go every morning. When I double the receipe I use 4 eggs and 3 cups of milk in place of the 2 cup egg whites and 2 cup milk. It turns out grea - 1/29/09
