Carrot and Orange Stir-Fry

2 T Sunflower Oil2 ¼ CUPS GRATED CARROTS8 OZ/225 G LEEKS, SHREDDED2 ORANGES, PEELED AND SEGMENTED2 T KETCHUP1 T RAW BROWN SUGAR2 T LIGHT SOY SAUCE½ CUP CHOPPED PEANUTS
1. Heat sunflower oil in a preheated wok.
2. Add grated carrots and leeks and cook until they have just softened (2-3 min)
3. Add Orange and cook gently as so not to break up the oranges.
4. Mix ketchup, b. sugar and soy in a small bowl.
5. Add mixture to the wok and continue to cook for another 2 minutes.
6. Transfer to warmed bowls and sprinkle with chopped peanuts. Then serve immediately.
*Serving over rice is nice
