Crockpot Pork Loin Roast

1.5 lb boneless pork roast1 can fat free chicken broth1/4 C Olive Oil1 medium onion, chopped4 cloves garlic, minced1 T Paprika1 T Garlic Powder1 T Poultry Seasoning1 t Oregano1 t basil1/2 T salt1/2 t black pepper
Mix all ingredients except chicken broth and spread over roast, patting it down on both sides. Place roast in crock pot and add the chicken broth. Cook on low heat 8-10 hours on low, or 4-6 hours on high. Add potatoes and carrots in the last 3 hours.

I made this for dinner tonight and it turned out really good. My family seemed to really enjoy it. I didn't have olive oil in the house though and substituted canola oil and I didn't have paprika - but I put in Thyme and Rosemary instead. It turned out really flavorful and tender. I'd make it again. - 3/17/10
