Kelly's Beet Jelly

Ingredients
6-8 Beets6 Cups beet water2 pkg Sure Jell1 sm Raspberry Jello (lsugar free)1/2 cup lemon juice8 cups sugar
Directions
Cook medium size beets until almost done. Soak in cold water and peel. In a stock pot put 7 cups fresh water and finish cooking beets. Take the beet water that you just used to boil the beets and measure out 6 cups. Boil beet water and add 2 pkg of Sure Jell, small raspberry jello, & 1/2 cup lemon juice. Bring to a boil then add 8 cups sugar. Cook 10 minutes. Easy boil. Put thick mixture into 1/2 pint jars with lids that seal. No need to water bath.

    I just got some beets and beets are one of the few vegetables I just cannot stand. I think that this would be great though. I will be making it this weekend. I bet the kids will love it. - 7/11/13
