Mexican Black Bean Salad

Ingredients
1/2 cup olive oil-divided2 large cloves garlic-minced5 jalapeno peppers-minced2 teaspoons ground cumin1 teaspoon oregano3 cups frozen corn1/2 cup water1 teaspoon salt1 1/2 cup frozen peas2 cans black beans-rinsed2 tomatoes-chopped1/2 cup green onions-sliced1/2 cup
Directions
Heat 2 table spoons of Olive Oil
Add Garlic, Jalpenos, Cumin, and Oregano
Saute 30 seconds
Add Corn and Water
Cook 2 minutes
Add salt
Remove from heat and place in bowl
Cook Peas 3 minutes
Remove and place in bowl with corn
Add Black Beans, Tomatoes,
Green onions, and Cilantro
Whisk Mustard, Pepper, Lemon Juice and Remaining Olive Oil. Pour over Salad and chill for 1 hour.
