Chicken Curry My Way

Ingredients
8 chicken thighs, boneless, skinless2c red bell peppers1.5c diced onions1 can diced tomatoes with juice3 tbsp curry powder6 cloves garlic, chopped10 slices of ginger, chopped2c water, boil with 1 boullion cube
Directions
makes 6 servings. The size of the serving depends on how thick you want to make it.

-Warm oil in pan
-add onions and peppers and cook until soft
-add ginger and garlic for just a minute
-add curry powder and lower heat so you don't burn the powder. You can also add a few tbsp of water to make a paste.
-add chicken cubes (1 inch pieces) and brown outside.
-add tomatoes and honey
-add water with boullion and let simmer to fully cook chicken and also to thicken up sauce.
-serve over rice
