Seafood Stew

Ingredients
1 tbsp vegetable oil1 onion, chopped2 cloves garlic, minced1 14 oz can diced tomatoes, with juice1.5 cups chicken broth1/2 cup red wine (can substitute white wine, clam juice or extra chicken broth)Parsley & Basil to taste8 oz peeled, deveined raw shrimp4 oz. tilapia or other fish, cubed4 oz crab meat
Directions
Heat oil in large saute pan. Add onion and garlic and saute until translucent. Season with parsley.

Add canned tomatoes, broth and red wine. (Again, any combination of broth, wine or clam juice can be used - just add 2 cups liquid. Season with basil, and salt and pepper if needed. Cover, and simmer for a minimum of 30 min. (Can simmer for up to two hours.) You can also add red pepper flakes if you like a spicier stew.

Add seafood and bring back to boil. Cover, and simmer another 5-7 minutes. Be careful not to overcook seafood. Serve with crusty bread.

    Definitely needed the red pepper flakes for flavor. I used EVOO instead of vegetable oil for health reasons. Also would add a stalk of celery next time. A great way to use leftovers, which is what I did with the tilapia and shrimp. Wonderful recipe. - 9/9/07
