Apple Cranberry Stuffed Pork Chop

2 tablespoons olive oil1/8 yellow onion, minced1 Granny Smith apple - cored anddiced2 stalks celery ribs, finely chopped1/4 cup dried cranberries or 1 cup whole fresh1 teaspoon kosher salt (optional)3 6 ounce boneless pork chops1/2 cup apple juice1 tablespoon cornstarch2 tablespoons brown sugar1 teaspoon freshly ground black pepper
1. Preheat oven to 350 degrees F (175 degrees C).
2. In a Dutch oven, heat 1 Tablespoon of olive oil.. Cook onion in olive oil until the onions are very soft and begin to brown. Stir in cranberries and cook until they "pop". Next add 1 T brown sugar, apple, celery, and cranberries. Season with salt.(optional)
3. Lay each chop flat on cutting board, and with a sharp knife held parallel to the board, cut a pocket into the pork, leaving three sides intact. Stuff each chop with apple-cranberry mixture.
4. . Cover, and bake in preheated oven for 45 minutes.
5. In a small bowl or measuring cup, stir together apple juice, cornstarch, and brown sugar; pour into Dutch oven or separate sauce pan. Reduce liquid volume by half, stirring frequently. Season to taste with black pepper. Serve this apple glaze over pork chops.
