Ingredients
1 whole chicken, rotissery or grilled in pieces or even boiled in some broth.1 tbsp salted butter(1) 8 oz box of Linguini.1 can of fat free creme of mushroom soup.1 cup of sliced canned mushrooms.1 cup heavy whipping creme(1) 32 oz carton of fat free half and half1 cup shredded swiss cheese0.5 cup italian style bread crumbs.2 tablespoons of salt.1 tbsp lemon pepper herb1 tbsp oregano1 tbsp thymeand all sorts of other herbs, rubs and spices u like!
Directions
shred the already cooked whole chicken and put it aside in a bowl, meanwhile have your linguini cooking in a boiling pot of water.
usually by the time i am done shredding the chicken, my pasta is done, so strain your pasta, let it dry just enough and lay evenly into a 9x12 baking dish.
in the same pot you cooked the pasta, which should be big, drop the tablespoon of butter along with all the herbs and spices i suggest, and you would like to add on top. When i am done pouring herbs and spices in there it looks like a mound, and it all turns into a dry paste, that i let catch heat for a minute or so, to bring out the flavors. the recipe can really hold a lot of flavor, so don't be afraid to go a little crazy, just don't make it "hot" spicy, all other spices are great!
Add the cup of heavy whipping creme and whisk if for a minute, then add the creme of mushrooms and the mushrooms, whisk some more.
add the half and half one cup at a time, making sure the sauce thickens before the next cup. you want to keep the texture creamy, it should coat your spoon and keep it coated. if you are having some trouble getting it to thicken, add about a 1/4 cup of the swiss cheese.
then when the sauce is the right texture, finally add the chicken and let that simmer on low heat for a couple of minutes.
Pour and spread the the chicken and sauce over the pasta as evenly as possible. it might be almost too much for the baking dish, try wiggling the pasta with a fork, getting the sauce as deep as possible.
It usually fills my dish to the edge! i just love the way that looks!!
finally take the rest of the cheese and sprinkle it all over, and finally do the same thing with the bread crumbs.
set your oven on broil and let your dish sit in there for a couple of minutes, just enough to melt the cheese and brown the bread crumbs.
i divide it in halves and then the halves in halves again, and each quarter into 3rds, and that's your serving. looks small there, but wait till you put it into your plate, it's a lot! and delicious!! try it with a fresh garden salad, romaine lettuce, english cucumbers, tomatoes and my extra olive oil dressing, and i guarantee you will have a WONDERFUL meal!!
