* Brown Sugar, 2 cups, packed * Margarine butter blend, 60% corn oil margarine and 40% butter, 0.5 cup * Smart Balance, Smart Balance Light Buttery Spread, 1Tbsp, 8 serving * Banana, fresh, 2 cup, mashed * Quaker Oats 100% Natural Whole Grain oatmeal, 2 cup * Egg, fresh, 4 large * Breakstone Reduced Fat Sour Cream, 1 Cup * Baking Powder, 2 tsp * Baking Soda, 2 tsp * Vanilla Extract, 1 tsp * Cinnamon, ground, 1 tsp
Combine dry ingredients in a separate bowl. Cream both margarine's with brown sugar, add eggs one at a time, add vanilla, sour cream and bananas and mix until well incorporated. Then mix in the dry ingredients 1/3 at a time. Spoon into muffin tin. Bake at 350 F
