Zolt's Walnut Crusted Salmon

Ingredients
1/2 med. Onion1 Tbsp Margarine, soft2 Tbsp Spicy Brown Mustard / Dijon3 Tbsp Honey2 tsp Parsley, drieddash Salt/Pepper1/3 cup Walnuts, ground1 Tbsp Bread crumbs, dry, grated, plain2 10 oz Salmon Fillets
Directions
In a saucepan brown onions and margarine. When browned add 2-3 Tbsp of water and mix browning into water. Let simmer until onions are very soft.
Add mustard, honey, parsley and dash of salt/pepper. Add 3-4 Tbsp of water if mixture has reduced to mostly onions.
Let simmer.
Meanwhile, if using whole walnuts and dried bread ground until crumb consistency and mix together.
Put salmon in greased baking dish.
Check mixture, it should have a slightly watery consistency, if not add 2-3 Tbsp of water and let simmer for 30s-1min for flavours to meld.
Pour mixture over salmon keeping as much onion on top of salmon as possible letting mixture cover bottom of pan. Salmon should not be immersed in water.
Cover and put salmon in fridge for a couple hours. Store walnut mixture in fridge.
When about ready to cook preheat oven to 400 F.
Before putting salmon into oven pack walnut mixture on top of salmon - leaving onions in place.
Bake uncovered about 10mins per inch of thickness of salmon at widest part or until salmon flakes apart.

A serving is half a fillet.
