low-fat cheesy potato soup

Ingredients
2 cups water3 medium potatoes3 tbsp blue bonnet veg. oil spread1/4 cup onion2 tbsp flour3 cups skim milk8 oz velveeta 1/2 fat cheese, cubed
Directions
Peel and cut 3 meduim potatoes into 1 inch cubes. Boil in two cups of water at medium heat until tender. While potatoes are boiling, sautee 1/4 cup onion in 3 tbsp veg. oil spread until transparent. Add 2 tbsp flour to onion mixture and cook for 3 minutes, stirring occasionally. Drain potatoes, reserving 1 cup cooking liquid. Add 3 cups skim milk, 1 cup cooking liquid, and 8 oz velveeta 1/2 the fat cheese, cubed, to potatoes. Cook until cheese is melted, stirring constantly.
