Lentil Stew

Ingredients
Add to 5 cups of water and 1 cup of broth (chicken is lovely, vegetable also is great!), the following ingredients:1 cup raw lentils (Red lentils are best)3/4 cup uncooked basmati rice1/2 cup minced, raw onion2 Tablespoons of minced garlic (Less if you are not a garlic fan)1 cup small diced raw carrots1/2 teaspoon cumin2 1/2 teaspoons tumeric1 cup raw medium diced peeled potatoSalt to taste (I used 1/2 teaspoon)Add pepper if wanted.
Directions
Mix all ingredients in medium to large cooking pot.

Bring to a boil. Cover and cook on low (barely a simmer) 30-45 minutes, stirring every 10 or so. Add more water if needed.

It is done when lentils are tender and the rice is cooked.

Makes about 3 1/2 quarts. I figured a serving size is 3/4 cup.

    This is really good! I added a little chili powder and cooked the onions and garlic in olive oil before adding everything else. Otherwise I didn't change anything. I am excited to try it next time with red lentils! - 4/8/13
