GF Pumpkin Muffins

Equal parts rice flour, tapioca starch and corn starch = 31/2 cups2 tsp baking soda1 tsp baking powder1 tsp salt1 tsp cinnamon1 tsp nutmeg1/2 tsp ground cloves1 cup margarine1 cup unsweetened applesauce1/2 cup honey4 egg whites1 15-oz can pumpkin puree3/4 cup orange juice (can use other citrus-y juices too)
Preheat oven to 350F.
Mix dry ingredients. Add moist ingredients. Mix just until smooth.
Put in greased mini muffin pans. Bake in preheated oven for 15m. For larger muffins bake for 25m.
Yield: 84 mini muffins (1 heaping tsp of batter per muffin; large muffins take 5 heaping tsp per muffin)
