Quick Mexican Cornbread

Ingredients
1 pkg. Jiffy Corn Muffin Mix1 large egg1/3 cup milk1 Tbs sugar 8oz creamed corn1 cup shredded colby jack cheese2 green chili peppers (sliced)1/2 cup shredded colby jack cheese
Directions
Preheat oven to 400 degrees.
Grease 9 x 9 baking pan.
Mix Jiffy Corn Muffin Mix, egg, milk, and sugar. Add creamed corn, 1 cup shredded colby jack cheese, and sliced peppers.
Pour all the mix into baking pan and cover the mix with 1/2 cup shredded colby jack cheese.
Bake 15-20 minutes or until golden brown

Serve with chili, stews, or soups

    I doubled this recipe. I used a 4oz can of diced jalapenos instead of the green peppers. I took it to a birthday party and everyone loved it! I used one standard 14 ounce can of the creamed corn. I had to increase my cooking time by 10 minutes. I will make this again and again! - 2/5/12
