Italian Beef Bake (with Ground Beef)

1 lb lean ground beef1/2 tsp basil1/3 tsp thyme leaves1/2 tsp oregano3/4 tsp fennel seed1/3 tsp garlic saltsalt and pepper to taste10 cherry tomatoes-halved1 medium sized egg plant-cubed1 med sized zuchini-cubed1/4 C chopped onion1 C chopped mushrooms
Crumble or pat raw meat into the bottom of a 9 x 13 pan. Mix spices and S&P in a small dish and sprinkle evenly over the ground beef.
Place vegtables over meat. Cover with tin foil and bake in 350 degree oven for approximately 40 minutes or until vegtables are tender.
If you like you could sprinkle with some parmesean cheese before serving. If you need a carb you could also include 1 C of brown rice and put that on top of the burger. (These are not included in the calories count.)
