Blueberry Applesauce Oatmeal Pancakes

Ingredients
1 cup Quaker rolled oats.50 cup lowfat (1%) cottage cheese.25 cup white or whole wheat flour.25 cup tap water3 large eggs1 teaspoon vanilla or lemon extract.50 cup unsweetened applesauce1 cup frozen (unsweetened) blueberries
Directions
Combine all ingredients except blueberries.

Spray heavy frying pan with Pam and heat until a drop of water sizzles. Pour pancake batter into 4 inch circles. Turn over when bubbles form and pop on edges & inside of pancakes. Cook until batter is no longer runny - press down with spatula or slice pancake with an edge of spatula to check.

Makes approximately 7-8 four inch pancakes.
