White bean sauce with spinach & tomatoes over Linguine

Ingredients
Nonstick Spray1 Tbsp minced garlic1 Tbsp Dried Basil1 Tbsp Dried Oregano2 cups fresh tomatoes, diced1 can any white beans (recipe based on Great Northern)1 - 10oz package fresh spinach6 cups cooked whole wheat spaghetti noodles6 Tbsp Parmesan cheese (grated)
Directions
1. Start boiling water for your pasta.
2. In a food processor, puree your beans for about 2 minutes (until they form a smooth puree, add water a tablespoon at a time as needed for desired consistency)
Add herbs while pureeing for best mix.
3. Lightly spray large nonstick skillet with nonstick cooking spray. Heat. Add garlic, saute for a minute or so.
4. Add tomatoes and bean puree and bring to a simmer.
5. Add spinach, top with lid, and simmer about 10 minutes. Stirring occasionally.
6. Spoon tomato/beans/spinach mixture over pasta and sprinkle with 1 tbsp Parmesan.

Serving size is 1 cup pasta and approx 1/2 cup - 3/4 cup sauce and 1 Tbsp Parmesan
