Lentil Garlic Soup

Ingredients
1 Tablespoon olive oil1 large onion4 cloves garlic2 cups dried split lentils1 teaspoon cumin8 cups chicken brothsalt & pepper to taste2 Tablespoons fresh lemon juice
Directions
Saute chopped onion and pressed garlic in olive oil in large saucepan or soup pot. After vegetables are translucent, add cumin and saute for 1 more minute. Add chicken broth and lentils and simmer until lentils start to break down. Cook until desired thickness is acheived. Add lemon juice, salt and pepper to taste. Serves 5

    My son and I really liked it. It can take more garlic, and I added some frozen spinach near the end to add more nutrition. Once you add the lentils, on medium heat it takes about 20 minutes to cook. - 6/27/13
