Atkins Chocolate Truffles

Ingredients
1 cup 2% milk7 ounces unsweetened chocolate3/4 cups granular sugar substitute (I mixed splenda and Sweet-n-Low)1 tablespoons unslated butter3/4 cups chopped pecans

Cook Time: 5 min
Chill Time: 2 hours
Yield: 35

In a large saucepan heat milk being careful not to scald. Add chocolate and stir until melted. Remove from heat; add sugar substitute and butter. Mix until smooth. Allow to slightly cool. Use a small melon ball scoop to form chocolate balls (or use 2 spoons). Roll in chopped pecans or cocoa powder. Refrigerate until cold and stiff, about 2 hours.

Place truffles in foil candy holders if desired.

    This never made it to the consistency to ball. Even tried refrigerating for 3 hrs and was still too runny to ball. Waste of money :( - 12/23/15
