3 medium russet potatoes1-1/2Tb lemon juice1/4 cup water1 Tb olive oil1-8oz can tomato sauce1/8 tsp salt1/8 tsp pepper1/4 tsp garlic powder1/2 tsp oregano1/8 tsp cinnamon1 Tb chopped fresh parsley
preheat oven to 400 degrees. spray an 8x12 casserole dish with gluten free nonstick spray. cut the potatoes into 1 inch cubes; place in casserole dish. sprinkle with lemon juice. in a small saucepan, combine the water, olive oil, tomato sauce, salt, pepper, garlic powder, oregano, cinnamon, and parsley. bring to a boil; pour the sauce over the potatoes. bake 50 min, stirring occasionally.
