Alyssa's Chocolate Chip Oatmeal Cookies

Ingredients
2 cups whole wheat flour1 cup granulated sugar1 cup light brown sugar2.5 cups instant oatmeal, blended12 ounces chocolate chips1/2 teaspoon salt1 teaspoon baking soda1 teaspoon baking powder1 teaspoon vanilla2 eggs1 cup vegetable shortening
Directions
Preheat oven to 375 degrees F.

Cream the shortening in a mixing bowl. Add both sugars and mix until combined.

In a food processor, blend the oatmeal until it is a coarse powder.

Mix in eggs and vanilla. Add all remaining ingredients except for chocolate chips. Mix thoroughly, then fold in chips.

Note: The batter may seem dry, but it will stay together; don't worry.

Using heaping teaspoons, space the rounds of dough about 1 inch apart (they will not flatten out when they bake).

Bake for 10 minutes.

Yields approximately 50 cookies.

    I am not sure about the vegetable shortening for healthy cookies. I'd play with this some and try canola oil or Smart Balance. - 9/22/09
