Yummy Croc Pot Beef Stew

1.5 pound chuck roast trimmed of fat and cut into small cubes1 large yellow onion in 1 inch chop3 cups baby carrots1.5 pounds medium red potatoes unpeeled halved then quartered (8 chunks per potato)2 cloves of garlic sliced2 TBSP dried parsley4 cups beef broth ( 1 whole carton)2 pkt brown gravy mix1 cup frozen peas, thawed ( make SURE you don't put frozen peas in a hot crock pot!!!!)
Put all ingredients EXCEPT gravy mix and peas in crock pot. Stir to combine. Cook on high for 4 to 6 hours or on low 6 to 8 hours. 30 minutes before ready to serve, switch pot to high, add peas and mix two pkts gravy mix with .5 cup room temp water (not cold) until smooth. Add to crock pot and stir. Simmer 30 minutes and serve over brown rice,if you like.
