Vegetable Lasagna

Ingredients
Oven ready lasagna noodles500g tub fat free cottage cheese680ml can pasta sauce(i used 4 cheese)half of 10oz. pkg baby spinach200g pkg light shredded mozza cheesesmall zuchini,thinly slicedsmall onion ,thinly slicedhalf sweet pepper finely chopped
Directions
First i mixed about half cup of water to sauce to thin it a bit,so it would spread better.
Put a few tbsp in bottom of 9x13 casserole,layer pasta strips in then layer zuchini and onion slices,top with more sauce,then more pasta strips.Spoon on top of this layer all the cottage cheese,spread it around then put on fresh spinach and chopped peppers,at this point i put in some Salt and pepper.Next put on your last layer of pasta then spread on all the rest of the sauce,top with mozza.Bake for 45 minutes or until pasta is done .I usually cover it until the last 10 min. or so at 350 degrees.
This yields about 8 servings at 183.2 calories!!!
