Ingredients
CILANTRO LIME DRESSING:1/4 cup Olive OilJuice of 2 Limes1/4 cup chopped Cilantro1 tsp Cumin1/4 tsp Salt & PepperSALAD:1 can (19 oz) Black Beans, rinsed & drained1 Red Pepper, diced2 cups Corn, kernel1/3 cup Red Onion, chopped1 Jalapeno Pepper, seeded & minced1. In medium bowl, whisk together oil & lime juice. Add cilantro, cumin, salt & pepper and mix well. 2. Stir in salad ingredients into above and correct seasoning.Serve at Room Temperature.Serves 5
