Apple Oat Snack Cake

1 c. boiling water1/2 c. old-fashioned oats1-3/4 c. all purpose flour1 t. baking soda1 t. ground cinnamon1/4 t. saltSplenda equivalent to 3/4 c. sugarBrown sugar Splenda equivalent to 3/4 packed br. sugar1/3 c. unsweetened applesause1 egg1 1/2 t. vanilla extract1 med. apple, peeled and choppedTopping:1/2 c. old-fashioned oats1/4 c. all-purpose flourBrown sugar Splenda equivalent to 1/4 c. packed br. sugar1 t. ground cinnamon3 T. I Can't Believe It's Not Butter (stick)
In a bowl, combine boiling water and oats; set aside. In a large bowl, combine the flour, baking soda, cinnamon and salt. In a mixing bowl, combine the Splendas and applesauce; beat ingredients just until combined. Fold in the apple. Pour into an 8-in. square baking dish coated with nonstick cooking spray. For the topping, combine the oats, flour, Splenda Brown Sugar, and cinnamon. Cut in butter until mixture resembles coarse crumbs; sprinkle over batter. Bake at 350 for 40 to 45 minutes or until a toothpick inserted near center comes out clean. Cool on a wire rack. (May make 1/2 the topping ingredients to lower calories even more. And taste is just as good.)
