1 can artichoke hearts, drained and chopped8 0z pkg of mushrooms, sliced1 bunch scallions, chopped5 T olive oil5 T flour2 C soy milk2 C water1T dry soup mixsalt and pepper to taste
Saute the onion and mushrooms in the olive oil for 5 min. Stir in the flour and cook slowly for 2 minutes, stirring. Slowly add the liquids, stirring constantly. Heat slowly until it thickens, then add the artichokes and seasonings. Taste to correct the seasonings.
