Savory Seafood Casserole

1.5 c cube stuffing (unprepared)1 c chopped "crab" (sub shrimp and clams if desired)4 egg whites1 whole egg1/2 c 2% milk (use nonfat for more calorie savings)1 tsp Italian Seasoning1 tsp Garlic Pepper1/4 c Red Onion, minced1/2 c Feta (use low fat for more calorie savings)
Preheat oven to 425. Using fork, beat the eggs, add the milk and mix well. Add stuffing mix and stir. Add remaining ingredients except cheese. Spray an 8x8 pan with nonstick spray. Poor mix into pan. Sprinkle with cheese. Bake 30 minutes till lightly browned and puffed up. Insert toothpick in center, should come out clean. Serve hot or cold. Makes 4 large pieces. Can cut smaller pieces for even less calories per serving.
**add-in ideas: sliced mushrooms, shredded zucchini, chopped asparagus. Can trade Feta for Parmesan or Asiago. Just be sure to account for additions or changes in terms of nutritional counts. Enjoy!
