Potato Vegetable Fritatta

4 large eggs beaten2 egg whites1 small zucchini sliced4 small red potatoes sliced thinly1 red or green pepper diced4 T chopped onion
cook potatoes, zucchini, onion, and pepper in olive oil in large non stick fry pan until soft. Salt and pepper to taste
Beat eggs and whiles together, pour over cooked vegetables and cook over med heat until completely set. Cover at the end for the top to set.
Sprinkle with feta.
