She-crab soup

Ingredients
4 T light butter4 T flour2 small onions, grated4 ribs celery, finely chopped1 T minced garlicsalt and pepper to taste1 t Old Bay seasoning1 qt 1% milk1 C fat-free evaporated milk1 T Tabasco sauce2 T Worcestershire sauce1 lb lump crab meat1 lb chopped cooked shrimp1/2 C sherry
Directions
In a dutch oven or large sauce pan over medium heat, melt the butter and flour together. Cook the mixture for 3-4 minutes for a blond roux. Stir in the onions, celery, and garlic. Season with salt, pepper, and Old Bay seasoning. Cook the vegetables for 2 minutes. Whisk in the milk, evaporated milk, hot sauce, and Worcestershire. Bring the liquid up to a boil and reduce to a simmer. Simmer the soup for 15 minutes. Stir in the crab meat and shrimp and continue simmering for 10-15 minutes. Ladle the soup into each bowl. Drizzle 1/2 T sherry into each bowl.
