Awesome Vegan Pancakes

Ingredients
1 1/3 cups flour (3/4 cup white whole wheat and the rest all-purpose unbleached white flour)2 tsp baking powder1/4 tsp salt2 tsp natural sugar2 tbsp ground flax seed1 cup vanilla soy milk1 tbsp unsweetened applesauce1/3 cup carbonated water (or more to desired consistency)1 banana, thinly sliced (or blueberries)
Directions
Mix dry ingredients (first 5) and liquid ingredients (everything else except fruit) separately. Then combine and stir until just mixed. Add fruit and stir until just mixed. Don't over mix. Cook pancakes in a frying pan lightly coated in cooking spray.

I usually serve with applesauce and a little maple syrup (not included in nutritional info).
