World's Easiest Sweet Potato Soup

Ingredients
2 Large Sweet Potatoes (5 inches long and FAT)4 big cloves of garlic2 tsp olive oil1 qt. chicken brothChili powder (not too spicy)Fresh nutmeg1 cup milk (1% used for calculations)Special Hardware: A Stick Blender!
Directions
Peel and dice the sweet potatoes into roughly 1-inch cubes.

Chop up your garlic and sweat it in the olive oil, in a medium-sized pot, for a few minutes. Add the sweet potatoes.

Pour in the broth, bring to a boil, then reduce to a simmer and cook for 20 minutes.

After twenty minutes, the potatoes should be nice and soft. Time to bust out your stick blender! Blend the soup together until it's nice and smooth. ***You may want to turn the heat off to do this so that the blended soup doesn't bubble and pop onto your skin.***

Return the blended soup to low heat. Add the chili powder, nutmeg, and milk. Stir until thoroughly combined and simmer for a few minutes. Add salt and pepper, if desired.

Serve piping hot with a nice crusty roll!



*If you don't have a stick blender, simmer the potatoes in just enough broth to cover them until they are soft, then mash them with your potato masher. Then add the rest of your broth, seasonings, and milk and simmer for a few more minutes. The soup won't be quite as smooth, but it will still be delicious!*
